Blueberry Mint Iced Herbal Tea

This delightfully refreshing Blueberry Mint Iced Herbal Tea is one of my go-to summer drink recipes. Juicy blueberries and invigorating mint combine to make a drink that is equal parts cooling and naturally sweet.

Made with spearmint herbal tea, this recipe is naturally caffeine-free and offers a range of herbal benefits, from supporting digestion and hormonal balance to containing antioxidants and anti-inflammatory properties.

Blueberry Mint Iced Herbal Tea

Makes about 4 cups

Ingredients:

For the blueberry syrup:

  • 1 cup of blueberries, fresh or frozen, rinsed and drained 

  • 1/2 cup of water 

  • ΒΌ cup honey or maple syrup 

For the herbal tea:

  • 4 tbsp dried spearmint tea leaves (or about Β½ cup fresh mint leaves)

  • 4 cups filtered water 

  • Fresh mint for garnish 

To make:

  1. To a saucepan over medium heat, add the blueberries, water, and maple syrup, stirring frequently until the mixture comes to a gentle boil. Boil for 2 minutes, using a fork to gently mash the berries. Then strain the blueberry berry mixture through a mesh sieve. Discard the solids and set the blueberry syrup aside. 

  2. Add 4 cups of water to the same saucepan and bring to a boil. Turn off the heat and stir in the dried mint leaves. Cover and let steep for 5 minutes. Then, use the mesh sieve to strain the tea into a large pitcher. 

  3. Stir in the blueberry syrup and let cool completely. 

  4. Serve over ice with a spring of mint.
