How to Make a Caramel Apple Galette

We’ll start by making the date caramel in a blender or food processor. Simply blend together dates, coconut milk, maple syrup, vanilla, and salt to create a deliciously smooth mixture that looks and tastes just like caramel sauce.

Next, we’ll gently toss sliced apples in fresh lemon juice, coconut sugar, and cinnamon, then place on a pie crust on top of the date caramel. Fold over the edges of the crust, brush the crust with some coconut milk, and bake until golden brown. So quick and easy to make, and SO yummy!

Choosing Apples for a Galette

Whenever I’m baking with apples, I find that using a crisp, tart-yet-sweet variety yields the best results. These are a few of my favorites for galettes:

  • Honeycrisp

  • Fuji

  • Pink Lady

  • Lucy Glo (this is what I chose for this recipe!)

If you’ve never tried Lucy Glo apples and they’re available where you live, I can’t recommend them enough! They are a hybrid between Airlee and Honeycrisp apples and are non-GMO. Lucy Global apples are absolutely delicious with a tart yet sweet, almost candy-like flavor. But maybe the best thing about them is their incredible color—from the outside, they appear to be a regular yellow apple, but once you bite or slice into them, you’ll reveal the most gorgeous pink color.

Where to Find Vegan Pie Crust

When looking for a vegan pie crust, you’ll find that several brands of conventional frozen or ready-to-bake pie crusts are “accidentally vegan”—made with shortening or oil instead of butter.

Just make sure to check the ingredients to make sure it’s vegan, and to also purchase a rolled pie crust for this recipe, not a pie shell (in a pie pan)! My favorite is Wholly Wholesome Organic Pie dough.

Makes 1 galette (about 4-6 servings)

Ingredients:

For the date caramel:

  • 1 cup pitted medjool dates

  • 1/2 cup full fat coconut milk

  • 1/4 cup Maple syrup

  • 1 tsp Vanilla extract

  • 1/4 tsp salt

For the galette:

  • 2-3 medium apples, thinly sliced (I used Opal apples but you can also use another sweet-tart apple such as honeycrisp or Fuji)

  • 1.5 tbsp fresh lemon juice

  • 2 tbsp coconut sugar, plush more for garnish

  • 1/2 tsp cinnamon, plus more for garnish

  • 1 vegan pie crust, thawed according to package directions (Note: Several brands of conventional frozen or ready-to-bake pie crusts are “accidentally vegan”, just check the ingredient list to make sure it’s vegan)

  • 2 tbsp coconut milk or other plant-based milk

To make:

  1. Make the date caramel. Add the dates, coconut milk, maple syrup, vanilla, and salt to a food processor and blend on medium speed until completely smooth (it should form a caramel-like consistency). Set aside.

  2. Preheat the oven to 425 F. Line a large baking sheet with parchment paper.

  3. To a medium bowl, add the sliced apples and gently toss in the lemon juice. Sprinkle with the coconut sugar and cinnamon.

  4. Roll out the pie crust onto the lined baking sheet. Spread the date caramel into the center of the pie crust, leaving about 2 inches of space around the edges. Arrange the sliced apple slices onto the pie crust in an even layer.

  5. Gently fold the edges of the galette inward toward the center, then brush the edges with coconut milk and sprinkle with cinnamon and coconut sugar.

  6. Bake for about 25-30 minutes or until the crust is golden brown. Remove from the oven and serve warm with vegan vanilla ice cream!
